धान का कटोरा कहे जाने वाला छत्तीसगढ़ भाजियों का भी गढ़ है. प्रदेश में भाजियों की 80 प्रजातियां एक समय पाई जाती थीं. इसमें 36 प्रकार की भाजियां ऐसी हैं, जिन्हें आज भी लोग चाव से खा रहे हैं. छत्तीसगढ़ में हर तरह की भाजियों के साथ सबसे ज्यादा पसंद की जाने वाली सब्जियों में मुनगा की सब्जी है. प्रधानमंत्री नरेंद्र मोदी ने एक बार “फिट इंडिया डॉयलॉग” के अंतर्गत इस खास रेसिपी के पराठे का जिक्र किया. तब उन्होंने कहा था जब भी मुझे समय मिलता है. तब मैं इन पराठों का स्वाद सप्ताह एक दो बार जरूर लेता हूं.
आज की भागती दौड़ती जिंदगी में हर कोई स्वस्थ रहना चाहता है, इसके लिए लाखों जतन भी करता है, लेकिन हेल्दी रहने के लिए जरूरी है कि हम हेल्दी फूड खाएं. मुनगा जिसे सहजन और ड्रमस्टिक भी कहते हैं. एक ऐसी ही सब्जी है जो हमारे जायके को तो बढ़ाती है साथ ही स्वास्थ्य के लिए भी बेहद फायदेमंद होती है. मुनगा के फूल से लेकर उसकी पत्तियां और फली तक औषधीय गुणों से भरी हुई हैं. इसमें ऐसे एंटी-ऑक्सीडेंट्स होते हैं जो शरीर की इम्यूनिटी को मजबूत करते हैं. साथ ही शरीर को भारी मात्रा में कैल्शियम, प्रोटीन, विटामिन-सी और पोटैशियम भी देते हैं. सहजन कई बीमारियों में बहुत फायदेमंद होता है. इसको खाने से डायबिटीज कंट्रोल में रहती है और ये हार्ट के मरीजों को भी फायदा पहुंचाता है. इसलिए आज हम आपके लिए लेकर आए हैं मुनगा के पराठे की रेसिपी.
आवश्यक सामग्री
गेहूं का आटा- 1 कप
बेसन- 1 चम्मच
सहजन की पत्तियां- 100 ग्राम
तेल- जरुरत अनुसार
लहसुन, अदरक, हरी मिर्च का पेस्ट- 1 चम्मच
हल्दी पाउडर- 1/2 चम्मच
लाल मिर्च पाउडर- 1/2 चम्मच
नमक- स्वादानुसार
घी या तेल
कैसे बनाएं मुनगा पराठे
- सबसे पहले एक थाली में गेहूं का आटा ले लीजिए, फिर उसमें बेसन का आटा मिक्स कीजिए.
- दोनों को मिक्स करने के बाद उसमें लहसुन, अदरक, हरी मिर्च का पेस्ट डालिए. सारे मसाले-लाल मिर्च पाउडर और हल्दी पाउडर मिला दीजिए.
- स्वादानुसार नमक और मुनगा की पत्तियां डाल दीजिए, और आखिर में मोयन के लिए थोड़ा सा तेल डाल दीजिए.
- अब इस सामग्री को अच्छे से मिक्स कीजिए और पानी मिलाकर आटा गूंध लीजिए.
- अब इस गूंधे हुए आटे की छोटी-छोटी लोई बनाकर इसे पराठे के शेप में बेल लीजिए.
- फिर तवे पर डालकर हल्का घी लगाकर दोनों तरफ से सेंक लीजिए.
- आपका पराठा बनकर तैयार है, गरमा-गरम पराठे हरी चटनी या अचार के साथ सर्व कीजिए.
